We LOVE Potato Soup
I've been in bed sick with strep throat the last few days. Thankfully Kelsey was able to come and keep the babies while I stayed away in bed. I'm finally a little better today so I and got up to make the babies potato soup for lunch. It turned out great. I followed a few recipes and didn't sure the crock pot.
Here's my recipe:
-3 bacon slices
-1 small onion
-6 large baking potatoes (peeled and diced)
-Low Sodium Chicken Broth (Large Carton)
-Ground black pepper
-Milk (or heavy cream)
-Cheddar Cheese
-Sour Cream
-Chopped chives
-Cook the bacon in a dutch oven pot. Add onion to the drippings and saute until tender
-Add diced potatoes and chicken broth to the pot. I added a little water as well. Season with black pepper, dried parsley, and salt if needed. Cook on high heat for about 20 minutes until potatoes are tender.
-Use a immersion blender to mash the potatoes. I left a few chunks of potatoes. Add cheddar cheese and milk or cream to the pot until you get the consistency you want.
-Serve with Cheddar cheese, sour cream, and chopped chives. ENJOY!!

Naptime @ 11 months
Lately the babies are taking awhile to go to sleep for their afternoon nap. So instead of napping they take turns shaking their heads and laughing at each other. It is so cute!

Mommy's Morning Out
At 11 months old, I thought it was time for the twins to venture out and experience new things. Also for selfish reasons, I really wanted to see how they would do with someone else keeping them outside of our home. Until now, only family and Kelsey (our sweet nanny) have kept the babies in our home. They have stayed the night other places but with us there. With the new baby coming in July I wanted the twins to slowly adjust to other people and places. I checked around town and found St. Paul's in Ocean Springs offers Mommy's Morning Out every Friday from 9am-noon. This was perfect!
So they started! I left around 9:30 and returned at 11:30. I will let them stay the entire time next week. I took the photos below when I picked them up. They did great and I really think they enjoyed it. I was worried about skipping their morning nap but they adjusted just fine. There were a total of 6 children in their age group from 9-15 months. Anna Kate and Foster were the youngest. I am happy with this decision and feel like the timing was perfect.
